This One-Pot Chicken and Rice recipe is a delightful blend of perfectly seasoned rice and tender chicken cooked together in a single pot. It’s a game changer for busy people as you can have a delicious meal with minimal effort and clean up. It is perfect for a weeknight dinner or a cosy family meal.
Ingredients
Tomatoes
Onion
Fresh garlic
Chicken
Soy Sauce
Oyster sauce
Black Pepper
Paprika
Chilli powder
Garlic powder
Oregano
Oil
Chicken stock
Two cups of Rice
Instructions:
- Chop your onions, and tomatoes, mince the garlic and set aside.
- Wash your chicken and pat dry with a paper towel
- Season your chicken with Soy Sauce, Oyster sauce, Black Pepper, Paprika, Chilli powder, Garlic powder, Oregano and Oil.
- Set aside or marinate in the fridge for deeper flavour.
- Pan fry the chicken for three minutes on each side and set aside.
- In the same pan, add chopped onions, chopped tomatoes and minced garlic.
- Let it fry for 4 minutes before adding your washed rice, tomato paste, soy sauce and ketchup, mix well, then add the fried chicken, pour in chicken stock, cover and let it cook for 25 minutes.
Your one-pot chicken and rice is ready to be served.
